How small-batch really works in our Tampa distillery.
"Small-batch" is one of those terms that gets thrown around a lot in the spirits world. But what does it actually mean? For us, it's not just a marketing term—it's how we actually operate. Our distillery in Tampa runs on a 15-gallon still. That's small. Really small. Most commercial distilleries run batches that are 10, 20, or even 100 times larger. But we've chosen to stay small for a reason: control. When you're working with smaller batches, you can pay attention to every detail. You can taste every cut, adjust every run, and make decisions based on what you're actually tasting, not just what the numbers say. You can catch problems early, make adjustments on the fly, and ensure that every bottle that leaves our distillery meets our standards. This means we're not running a production line. We're making spirits the way they were meant to be made: carefully, thoughtfully, and with attention to detail. Every batch is tasted, evaluated, and approved before it's bottled. If something doesn't meet our standards, we don't bottle it. It's that simple. So when we say "small-batch," we mean it. We're not trying to scale up or cut corners. We're committed to making spirits the right way, even if it means making less of them.
